Super Yummy Recipe for Beignets!

"Try this traditional recipe for beignets from a user who swears this tastes just like the ones served at the famous New Orleans hot spot, the Cafe du Monde. Pour a coffee or hot chocolate and enjoy these tender pillow-like doughnuts for any special occasion or weekend breakfast."

Ingredients:
1/2 cup water
1 tablespoon yeast
1/4 cup shortening
1/2 cup sugar
1 teaspoon salt
1 cup boiling water 1 cup evaporated milk
2 eggs, beaten
7 1/2 cups flour
1 quart vegetable oil for frying
1 cup confectioners' sugar for dusting

Directions:
1. Pour 1/2 cup room temperature water into a small bowl. Sprinkle the yeast over the water and let stand for about 5 minutes to dissolve.
2. Combine the shortening, sugar, and salt in a large bowl. Pour the boiling water over the shortening mixture and then stir in the evaporated milk. Wait for the mixture to cool down until it is lukewarm. Then, add the yeast and water mixture and beaten eggs.
3. Slowly mix in the flour until the dough forms a ball. Cover the dough with plastic wrap and refrigerate for 30 minutes to 1 hour.
4. Working with a small portion (a little larger than a baseball) at a time, roll out the dough 1/8-inch thick. Cut the rolled out dough into strips 2 to 3-inches wide, then cut again in the opposite direction and at an angle, making diamond shapes.
5. Heat your oil for frying in a deep and wide, heavy-bottomed skillet over medium-high heat to 360 degree F (180 degrees C).
6. Slide dough slowly into the oil to avoid splattering and deep fry until they puff up and are golden brown, 3 to 5 minutes. Carefully remove onto a rack with paper towels underneath and allow to cool until you can handle them. Place in a clean paper bag with confectioners' sugar and shake gently until covered generously or, use a sifter to dust the beignets with powdered sugar.

Yummy Holiday Recipe

Looking for the most delish Holiday treat to make? We found one that is sure to impress.

Ginger Crunch Cake with Strawberry Sauce
Crunch Topping
1 cup pecans, toasted and chopped fine
1/2 cup gingersnap cookie crumbs (from about eight 2-inch gingersnaps)
1/2 cup firmly packed light brown sugar
1/2 stick (1/4 cup) unsalted butter, melted

Ginger Cake
1 3/4 cups all-purpose flour
3/4 teaspoon baking soda
3/4 teaspoon ground ginger
3/4 teaspoon cinnamon
3/4 teaspoon salt
3/4 cup unsulfured molasses
2/3 cup buttermilk
1/3 cup granulated sugar
3/4 stick (6 tablespoons) unsalted butter, softened
1 large egg, beaten lightly

3 cups well-chilled heavy cream
1 teaspoon vanilla extract
4 tablespoons granulated sugar
1 pint strawberries
1 tablespoon fresh lemon juice

Garnish: strawberries, with leaves and blossoms if desired (not recommended for eating)

Preheat oven to 350F. Grease three 8- by 2-inch cake pans.

For crunch topping:
In a small bowl combine crunch topping ingredients, stirring until combined. Divide topping among pans and press evenly onto bottom.

For ginger cake:
In a large bowl whisk together flour, baking soda, ginger, cinnamon, and salt. Add remaining ginger cake ingredients and with an electric mixer beat on high speed 2 minutes. Carefully spread batter over crunch topping in pans and bake in upper and lower thirds of oven, switching position of pans in oven halfway through baking, 20 minutes, or until a tester inserted in center of each layer comes out clean.

Immediately invert cake layers onto racks lined with wax paper and cool completely. Cake layers may be made 2 weeks ahead and frozen, wrapped separately in plastic wrap. Thaw layers in refrigerator before proceeding with recipe.

In a chilled bowl with chilled beaters of an electric mixer beat 2 cups cream with vanilla and 2 tablespoons granulated sugar until it just holds stiff peaks.

Cake Assembly:
Arrange 1 cake layer, crunch side up, on a cake plate and spread with a heaping cup whipped cream. Repeat with another cake layer and another heaping cup whipped cream and top with third cake layer, crunch side up. Leaving top plain, spread remaining whipped cream on side of cake to coat (a final coating will be added later). Chill cake, covered loosely with plastic wrap, at least 4 hours (to facilitate slicing) and up to 24.

Hull strawberries and slice half of them. In a bowl with a potato masher mash sliced berries with lemon juice and remaining 2 tablespoons granulated sugar. In a food processor pure remaining berries and strain through a fine sieve into bowl with mashed berry mixture. Sauce may be made 1 day ahead and chilled, covered.

In a chilled bowl with chilled beaters of an electric mixer, beat remaining cup cream until it just holds stiff peaks and spread decoratively on side of cake. Arrange some whole strawberries on top of cake and garnish plate with additional whole strawberries.

Serve cake with strawberry sauce.

New-home sales rise to highest level in a year

According to MSNBC:

"Sales of new homes rose last month to the highest level in more than a year as strong activity in the U.S. South offset weakness in the rest of the country.

The Commerce Department said Wednesday that sales rose 6.2 percent to a seasonally adjusted annual rate of 430,000 from an upwardly revised 405,000 in September. Economists surveyed by Thomson Reuters had expected a pace of 410,000.

There were 239,000 new homes for sale at the end of October, the lowest inventory level in nearly four decades. At the current sales pace, that's a 6.7 months of supply, down from last winter's peak of more than a year."

Home construction at lowest point in 6 months!!!

"The slowdown in construction means that there are many fewer new homes for sale, about 251,000 in all." That's the smallest inventory since 1982, according to Larson.

"The new home market, which was dramatically oversupplied during the boom, is now dramatically undersupplied," he said.

The credit won't be available forever, Mr. Fadel says.

"This is a medication for the housing crisis," he says, "Once the patient -- which is the housing market -- is cured, there will be no medication needed."

Be mindful of interest rates
Interest rates are low right now, but will likely rise next year, Ms. Warren says. Higher rates will affect your monthly mortgage payments, thus the affordability of the house you are buying.

"It's pretty universally accepted that rates will be higher next year," she says. "What is unknown is how fast and by how much."

Average rates on 30-year fixed-rate mortgages have been hovering around 5%. But when the Federal Reserve stops buying large amounts of mortgage-backed securities next year, interest rates could rise, Ms. Warren points out. The Fed plans to end its purchase program in March.

CBH applauds Congress on extending & expanding the homebuyer tax credit for home purchases through April 30, 2010. This new law extends the $8,000* first time homebuyer tax credit. Even bigger news is the expansion to include a $6,500* tax credit for existing homeowners. In addition income limits have been increased to $125,000 for single tax payers and $225,000 for married couples who file jointly.

One Stop Shop Holiday Shopping

Seriously? The Tax Credit Extension is sitting on Obama's Desk!

The House of Representatives has voted to pass legislation extending the home buyer tax credit until April 30, 2009. Last night the Senate voted 98-0 to pass the legislation. Next the bill will head to President Obama to be signed into law. While the bill extends the $8,000 tax credit for first time home buyers, it also makes available a tax credit to homeowners who have lived in their current residence for at least five years. The credit for these buyers will be capped at $6,500. Income levels will be extended from the current limits of $75,000 for a single purchaser and $150,000 for couples to $125,000 and $225,000 respectively. Buying a home is AWESOME!!

I'm in the process of purchasing my very first home and I have to say it's amazing! As the coordinator of the Meridian Sales Center, I work with people in my very situation on a daily basis and always thought I could relate to what they were feeling...but I couldn't until now.

Going through this process has been a little stressful trying to get all of our ducks in a row and of course hoping that no one else would submit an offer on MY NEW HOME! Luckily it's been accepted and my husband has already talked about how we're going to decorate...what's gotten into him? Oh yes, knowing that we're absolutely making the right choice.
